This is a kabab dish popular in the northern part of India. I wasn’t sure when I started off with this recipe, but trust me..it came out really well. It tasted just like we have at the restaurants.



Note: My 1 cup is 240 grams/ml, 1 tablespoon -15 grams/ml, 1 teaspoon-5 grams/ ml and 1 kg  is 2.2 pounds.

Boneless Chicken breast cubes (small uniform sized pieces)- 1 pound

Cooking oil – 2 tablespoons

1st marinade:

Fresh Ginger paste-1 teaspoon

Fresh Garlic paste – 1 teaspoon

Kashmiri Red chilli powder ( the less spicy version of the normal red chilli powder but gives a bright red color) -1 teaspoon

Salt- as required

Lime juice – 1 tablespoon

2nd Marinade:

Cooking Oil-  4 tablespoons

Chickpea flour (besan) – 2 tablespoons

yoghurt -1/2 cup

Kashmiri Red chilli powder ( the less spicy version of the normal red chilli powder but gives a bright red color) -1 teaspoon

Fresh Ginger paste-1/2 teaspoon

Fresh Garlic paste – 1/2 teaspoon

Turmeric powder – 1/2 teaspoon

Salt-As required

Garam Masala- 1 teaspoon


Stage 1:

Marinate the chicken with all ingredients under Marinade 1 and keep aside for 20 minutes.

Stage 2:

1.Heat 2 tablespoons oil in a heavy bottom pan and add the chickpea flour to it. keep stirring till it gets blended well and gives a nice nutty smell and flavor.

2. Transfer to a bowl and mix with all other ingredients under Marinade 2 very well (except the left over 2 tablespoon cooking oil).

3. Now add the 2 tablespoon cooking oil to the mix and whisk well until oil blends well and is not to be seen on the surface.

4. Add the chicken from Stage 1 to this mix and keep aside for at least 2 hours. I keep in the fridge overnight.

Stage 3: Baking

1.Skewer the marinated chicken pieces from Stage 2. I used bamboo skewers and soaked the skewers for 30 minutes in cold water to avoid burning of skewer when we bake.


2.Preheat the oven to 450 Fahrenheit or 220 degree Celsius.  Bake for 10 minutes .


3.Spray oil on the chicken and continue to bake for another 10 minutes. This procedure is must to get the perfect taste. Our yummy yummy Chicken tikka is ready 🙂
