Sugar syrup for Indian sweets

Ingredients:

Note: My 1 cup is 240 grams/ml, 1 tablespoon -15 grams/ml, 1 teaspoon-5 grams/ ml and 1 kg  is 2.2 pounds.

Water – 1 cup

Sugar – 1 3/4 cups

Cardamom powder -1/4 teaspoon

Lemon Juice – 1 tablespoon

Steps:

1.Mix water and sugar in a heavy bottom pan and bring to a boil.

2.Keep boiling till it turns sticky ad when it gives the one string consistency, add the lemon juice and cardamom powder.To check for one string consistency , put a drop of the syrup in a plate with water , it will not mix with water but settle at the bottom.

3.Lemon juice prevents crystallization of sugar. If you do not have lemon juice and you see it crystallizing, add 2-3 spoons of water and warm up the syrup again.

Note: If your sugar is not clean and does not give a clear solution on boiling add 1-2 spoons of milk to the boiling syrup and this will result in the milk+dirt coagulating at the surface which is called the scum. Scoop out gently using a spoon.
